Chicken & Rice
Ingredients
1-up to 8 pieces of chicken, legs, thighs, wings, breasts.
2-butter
3-Lipton chicken soup mix
4-1 cup rice

Directions
Preheat oven to 425°
Put chicken pieces in a roasting pan skin side up
Put dabs of butter as generously as you like on chicken
Sprinkle with salt and pepper and paprika
Fill pan with water about half way up chicken
Place in oven and bake 25 minutes
Remove pan and place chicken on a plate
Add 1-2 packages of Lipton Soup Mix or 1 package and 2 chicken bouillon cubes, stir all until dissolved.
distribute 1 cup of rice evenly in pan
Replace chicken in pan and slowly pour more water in without disturbing the rice too much.
Lower oven temp to 375° and bake another 35-45 minutes until rice looks fluffy and done. You can add a bit more water if needs to cook more. If all water gets soaked, up sometimes it may look dry on top but under will be cooked and I like the crunchy top sometimes.
Personally, I like this mainly for the rice and play with the amounts and chicken flavoring to keep the right flavor, because sometimes I make more rice. Even though it might not be the healthiest option, I like to be generous with the pats of butter. I grew up eating this. My mother used to start it for dinner before she headed off to work the night shift.
